🛒 Ingredients

- 200 grams of rice noodles / yellow noodles (make sure they are egg-free)
- 200 grams of white tofu/silk tofu, cut into cubes then fry briefly.
- 100 grams of fresh bean sprouts
- One bunch of kale/green mustard greens, cut into bite-sized pieces
- One stalk of lemongrass, bruised
- Two lime leaves, tear off the middle rib
- 400 ml thick vegetable coconut milk
- 600 ml plain vegetable stock
- 3 tablespoons vegetable oil

- 5 shallots
- 3 cloves of garlic
- 2 curly red chilies (adjust to your liking for spiciness)
- 2cm of burnt turmeric
- 2 cm ginger
- One tablespoon of roasted coriander
- 1 tablespoon vegetable shrimp paste (optional)
- 1/2 teaspoon cumin
- #spices and toppings;
- Salt and coconut sugar, to taste
- Basil leaves, sliced chilies, lime, and fried onions for topping

Grind all the ground spices. Heat the oil, then sauté the ground spices with the lemongrass and lime leaves until fragrant and cooked through.

Pour in the vegetable stock and bring to a boil. Add the fried tofu, reduce the heat, and simmer for 10 minutes to allow the flavors to infuse.
