Pesto Hummus

Pesto Hummus is a creative and delicious blend of Middle Eastern classics and Italian flavors, made entirely 100% plant-based! The texture is very smooth, thick and creamy like real hummus, with the added flavor of fresh basil leaves, savory pine nuts and the distinctive aroma of olive oil from pesto. This dish is very special because it combines two different world flavors into one harmonious whole, more fragrant, more colorful and rich in nutrition. Suitable as a spread on bread, a dip for vegetables or a complement to main dishes.

🛒 Ingredients

  • #The main ingredient;
  • 250 grams of soft boiled chickpeas (drain the water)
  • 3 tablespoons sesame paste/tahini
  • 2 tablespoons fresh lime juice
  • 2 small cloves of garlic
  • 3 to 4 tablespoons of extra virgin olive oil
  • 50 grams of fresh basil leaves that have been washed clean
  • 2 tablespoons roasted pine nuts/cashews
  • 1/2 teaspoon sea salt, black pepper to taste
  • A little boiled water if necessary to make the texture softer.
  • #additional ingredients:
  • A little olive oil, basil leaves and nuts for garnish

    Place the chickpeas, tahini, lime juice, garlic, salt, pepper and 2 tablespoons olive oil in a blender. Blend until soft and thick

    Add the basil leaves and pine nuts/cashews, blend again briefly so that the pesto texture still feels a little rough, but not too smooth.

    Add the remaining olive oil and a little water if it feels too thick, stir well until the desired consistency is achieved.

    Transfer to a serving bowl, drizzle with a little olive oil on top, always garnish with fresh basil leaves and roasted peanuts.

    Serve immediately with flatbread, vegetable chips, or freshly cut vegetables. Your special meal is ready to be enjoyed!
