Gigantes Plaki

Gigantes Plaki is a legendary traditional dish from Greece prepared entirely plant-based with no animal ingredients whatsoever. Giant horse beans cooked slowly until very tender, combined with a fresh tomato sauce scented with Mediterranean herbs, onions and the distinctive fragrance of olive oil. This dish is very special because it maintains the simplicity and authenticity of its original taste, which is soft, savory, slightly naturally sweet and very healthy. It is usually served as an appetizer, main dish, or accompaniment to bread, and is even more delicious if left to sit for a while so that the spices can be absorbed.

🛒 Ingredients

  • #the main ingredient:
  • 300 grams of giant horse beans (gigantes beans) soak in cold water for at least 8 hours or overnight
  • One large onion, finely chopped
  • 3 cloves garlic, finely chopped
  • Two carrots, cut into small cubes
  • 400 grams of diced ripe tomatoes/canned tomatoes
  • 2 tablespoons tomato paste
  • 100 ml pure olive oil
  • 300 ml water/vegetable stock
  • #seasonings and complementary ingredients:
  • One teaspoon of dried/fresh oregano leaves
  • 1/2 teaspoon thyme leaves
  • Salt and black pepper to taste
  • A little coconut sugar to balance the sour taste of the tomatoes.
  • Chopped fresh parsley for sprinkling

    Drain the soaked beans, boil them in boiling water for 40 minutes until they are soft but not broken up, then drain.

    Heat olive oil in a large saucepan, sauté onion until softened and translucent, add garlic and carrots, cook for another 5 minutes.

    Add tomato paste, chopped tomatoes, spices, sugar, salt, pepper, and water/stock. Bring to a boil.

    Add the boiled peanuts and stir gently. Reduce the heat, cover the pan, and simmer for 20 to 25 minutes, until the sauce thickens and the spices are fully absorbed.

    Turn off the heat and let it sit for 10 minutes to allow the flavors to meld. Serve warm or at room temperature with a sprinkle of parsley. Your delicious meal is ready to be enjoyed!
