🛒 Ingredients

- 500 grams of potatoes, peeled and sliced thick/round
- One onion, roughly chopped
- 2 cloves of garlic, crushed
- One carrot, sliced into rounds
- One stalk of celery, roughly chopped
- One red tomato, diced
- 1 liter of plain vegetable stock
- 2 tablespoons olive oil
- #seasonings and complementary ingredients:
- 1/2 teaspoon sweet paprika powder
- 1/2 teaspoon ground black pepper
- Salt to taste
- Fresh mint leaves or parsley for garnish

Heat olive oil in a large saucepan, sauté onion and garlic until fragrant and wilted.

Troop the carrots, celery, and tomatoes, cook briefly until the tomatoes are slightly broken down.

Add the potato pieces and stir well with the spices. Pour in the vegetable stock until all the ingredients are submerged.

Bring to a boil, then reduce the heat, cover the pan and simmer for 30 to 35 minutes until the potatoes are completely tender and the sauce has thickened naturally.
