Espinacas con Garbanzos is a classic traditional dish from Andalusia, Spain, adapted to a completely plant-based 100% plant-based dish without compromising on its original flavor. 🛒 Ingredients
- #the main ingredient:
- 250 grams of soft boiled chickpeas (you can use a drained can)
- 300 grams of fresh spinach, cleaned
- One onion, finely chopped
- 3 cloves garlic, finely chopped
- Two ripe red tomatoes, diced or 200 grams of canned tomatoes
- One tablespoon of toasted breadcrumbs
- 2 tablespoons of extra virgin olive oil
- #seasoning ingredients:
- One teaspoon of sweet paprika/smoked paprika powder
- 1/2 teaspoon ground cumin
- A pinch of chili powder (optional)
- Salt and black pepper to taste
- A little water or vegetable stock if needed

Heat olive oil in a large frying pan, saute the onions until soft and fragrant. Add garlic, saute briefly until golden

Add the breadcrumbs and spice powder, stir quickly for 1 minute to release the aromas. Add the tomatoes and cook until they break down and form a thick sauce.

Add the chickpeas and mix well with the spices. Add a little water if it's too dry. Cook gently for 5 to 7 minutes to allow the spices to penetrate the beans.

Finally add fresh spinach, stir gently until wilted evenly. Add salt and pepper to taste
