Vegan Corn Chowder

Vegan Corn Chowder is a hearty, hearty soup dish, adapted completely without dairy cream, butter or other animal ingredients, and is 100% plant-based! 🛒 Ingredients

  • #the main ingredient:
  • 300 grams of fresh/boiled sweet corn kernels
  • Two medium-sized potatoes, cut into small cubes
  • One onion, finely chopped
  • 2 cloves garlic, finely chopped
  • One stalk of celery, thinly sliced
  • One carrot, cut into small cubes
  • 700ml plain vegetable stock
  • 200 ml plain vegetable milk (liquid coconut milk/soy milk)
  • #Thickener and seasoning:
  • 2 tablespoons of cornstarch dissolved in a little water
  • 2 tablespoons olive oil/vegetable oil
  • 1/2 teaspoon black pepper powder, smoked paprika powder (optional)
  • Salt and coconut sugar to taste
  • Fresh dill/celery leaves for sprinkling

👩‍🍳 Instructions

    Heat oil in a large pan, sauté onions until softened, add garlic, celery and carrots, cook until fragrant.

    Add the diced potatoes and some of the corn kernels and stir well for 2-3 minutes. Pour in the vegetable stock, bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes, until all the vegetables are tender.

    Take about half of the soup and the vegetables, puree with a blender until smooth, then pour it back into the pan.

    Add the remaining corn kernels and vegetable milk, stir gently. Add the cornstarch solution, and cook, stirring constantly, until the sauce thickens and thickens completely.

    Season with salt, pepper, and other seasonings to taste. Turn off the heat and serve warm with a sprinkling of fresh herbs. Your delicious dish is ready to be enjoyed!
