🛒 Ingredients
- 250 grams of piped/bent macarons
- One medium sized potato, peeled and cut into small pieces
- One medium carrot, cut into small pieces
- 50 grams of raw cashew nuts, soak in hot water for 15 minutes
- 300 ml of boiled vegetable water/fresh vegetable milk
- 2 cloves of garlic, crushed
- Dissolve one tablespoon of cornstarch in a little water
- #seasonings and complementary ingredients:
- One tablespoon of nutritional yeast (for a natural cheese flavor)
- 1/2 teaspoon garlic powder, 1/2 onion powder
- One teaspoon of lime juice
- Salt, black pepper and a little sugar to taste
- 2 tablespoons breadcrumbs/grated vegetable cheese for sprinkling
- Fresh parsley leaves for garnish

Boil the macaroon in boiling water with a little salt until cooked and chewy, drain and set aside.

Boil the potatoes and carrots until very soft, drain the water but leave a little of the cooking water.

Place the potatoes, carrots, cashews, garlic, plant-based milk, nutritional yeast, and all the spices in a blender. Blend until smooth and thick.

Pour the sauce mixture into a saucepan and cook over low heat, stirring gently. Add the cornstarch mixture and stir until the sauce thickens and becomes glossy. Taste and adjust the seasoning.

Add the macaroon to the sauce, stir well until all the pasta is perfectly coated.

Transfer to a heatproof dish, sprinkle with breadcrumbs or plant-based cheese, and bake for 10 to 15 minutes, until the surface is browned and crispy.
