🛒 Ingredients

  • #skin and rice ingredients:
  • 200 grams of sushi rice, wash thoroughly and cook thoroughly
  • 2 tablespoons rice vinegar
  • One teaspoon of coconut sugar
  • 1/2 teaspoon salt
  • 3 to 4 sheets of Nori (seaweed)
  • A little black/white sesame
  • #Filling ingredients:
  • 1/2 avocado, sliced lengthwise
  • One cucumber, seeds removed, sliced lengthwise
  • 100 grams of fried tofu/dry tempeh, thinly sliced lengthwise
  • One carrot, sliced lengthwise then boiled briefly
  • Grilled enoki mushrooms or sautéed shiitake mushrooms (optional)
  • #sauce ingredients and toppings:
  • 2 tablespoons vegetable mayonnaise
  • One tablespoon of sweet/spicy chili sauce
  • One tablespoon of vegetable soy sauce
  • Fried onions/crispy crackers for topping
  • Pickled ginger and vegetable wasabi for accompaniments

    Mix rice vinegar, sugar and salt until dissolved. Pour over freshly cooked sushi rice while warm, stir gently and let cool to room temperature.

    Spread the Nori on a bamboo mat, spread the rice thinly to cover the surface, sprinkle a little sesame seeds.

    Arrange all the filling ingredients in the middle of the rice, then roll it slowly and press it down with a bamboo mat until it is neat and sturdy.

    Cut the sushi rolls 2 to 3 cm thick using a knife moistened with water to prevent sticking.

    Mix all the sauce ingredients until well combined, drizzle over the sushi pieces, then sprinkle with fried onions or crispy crackers. Serve with pickled ginger and wasabi. Your special dish is ready to be enjoyed!
