Cazuela

Cazuela is a warm and filling soup dish that is a traditional comfort food in many Latin American countries, adapted completely 100% plant-based! It contains a variety of seasonal vegetables, nuts and spices that are slowly cooked until the sauce thickens and the flavors blend perfectly.This dish is very special because of its rich, warm and comforting taste, its texture is soft but still contains textured pieces of vegetables. And it is very flexible and can be adapted to existing materials without using any animal ingredients at all. It is perfect to serve as a main dish in cold weather or when you want a filling meal.

🛒 Ingredients

  • #The main ingredient:
  • One medium sized yellow pumpkin/parang pumpkin, peeled and cut into cubes
  • Two carrots, cut diagonally
  • Two potatoes, cut into large pieces
  • One stalk of celery, roughly chopped
  • 1 onion, roughly chopped
  • 3 cloves garlic, bruised
  • 150 grams of soft boiled red beans/chickpeas
  • 2 red tomatoes, roughly chopped
  • 1,2 liters of vegetable stock
  • #Seasonings and toppings:
  • One teaspoon of cumin powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon sweet paprika powder
  • Salt and black pepper to taste
  • 2 tablespoons vegetable oil
  • Fresh coriander leaves, lime slices for serving

    Heat oil in a large saucepan, sauté the onion and garlic until fragrant and wilted. Add all the ground spices and stir briefly.

    Add the tomatoes and cook until slightly broken down. Add the pumpkin, carrots, potatoes, celery, and boiled beans. Stir well.

    Pour in the vegetable stock until all the ingredients are submerged. Bring to a boil, then reduce the heat, cover the pan, and simmer for 35 to 40 minutes, until all the vegetables are tender and the sauce has thickened naturally.

    Taste and adjust the salt and pepper.

    Serve warm in a bowl. Sprinkle with cilantro and a lime wedge for sprinkling just before serving. Your delicious meal is ready to be enjoyed!
