Zeytoon Parvardeh is a traditional Persian dish, which is 100% plant-based and very rich in flavor. A unique blend of crunchy green olives, savory walnuts, sweet and sour pomegranate seeds, and the distinctive aroma of mint leaves and spices. 🛒 Ingredients
- 300 grams of seedless green olives, halved
- 100 grams of walnuts, roughly chopped
- One medium sized onion, finely chopped
- 2 tablespoons finely chopped fresh mint leaves (or one teaspoon dried mint)
- 2 tablespoons of extra virgin olive oil
- 1 to 2 tablespoons apple cider vinegar/fresh pomegranate juice
- Salt and black pepper to taste
- A little granulated sugar/coconut sugar (optional to balance the taste)

If the olives taste too salty, soak them in cold water for 30 to 60 minutes, then drain and pat dry.

Combine olives, chopped onions, walnuts and pomegranate seeds in a large bowl. Stir gently

Combine olive oil, vinegar/pomegranate juice, mint, salt, pepper, and a little sugar, if using. Stir until everything is well combined.

Cover the container and store in the refrigerator for at least 1 hour before serving, so that the flavors blend perfectly.
