Mincemeat Vegan

🛒 Ingredients

  • 100 grams of black raisins
  • 80 grams of golden raisins
  • 80 grams of dried sweet orange peel/cloves, finely chopped80 grams of dried sweet orange peel/cloves, finely chopped
  • 60 grams dates, seeds removed, chopped
  • 50 grams dried apricots, chopped
  • 50 grams fresh apple, peeled and coarsely grated
  • 30 grams of cashew nuts/walnuts, roughly chopped
  • 2 tablespoons vegetable margarine/solid coconut fat
  • 3 tablespoons liquid brown sugar / coconut sugar
  • 1/2 teaspoon cinnamon powder
  • 1/4 teaspoon clove powder
  • 1/4 teaspoon nutmeg powder
  • One tablespoon of lemon juice / orange margarine
  • 50 ml water/apple juice
  • A little fresh grated orange peel

👩‍🍳 Instructions

    Mix all the dried fruit, grated apple, orange peel and nuts in a heatproof saucepan.

    Add sugar, vegetable margarine, spices, water/apple juice, and orange juice. Stir well.

    Cook over very low heat, stirring occasionally, for 30 to 40 minutes until the fruit is soft and the liquid has reduced and thickened.

    Turn off the heat and let it cool completely. The flavor will be even better if it sits in a covered container in a cool place for at least 24 hours before using it as a pie or cake filling. Your dish is ready to enjoy!
