🛒 Ingredients
- 200 grams of brown/green lentils, washed clean
- One onion, finely chopped
- Two cloves of garlic, finely chopped
- One carrot, cut into small cubes
- One fresh spinach, take the leaves only
- 200 ml light thick coconut milk/vegetable cooking cream
- 600 ml vegetable stock
- 1 teaspoon fresh thyme leaves / 1/2 teaspoon dried thyme
- One tablespoon of olive oil/vegetable oil
- Salt and black pepper to taste
- A little bit of lime juice (optional)

Heat oil in a pan, sauté onions until wilted, add garlic and carrots, sauté briefly until fragrant.

Add the lentils and vegetable stock, bring to a boil, then reduce the heat. Cover the pan and cook for 20 minutes, until tender.

Pour in coconut milk/dry vegetable oil and thyme, stir well, cook for another 5 minutes until the sauce thickens to a creamy consistency.

Finally, add the spinach leaves and stir briefly until they wilt. Turn off the heat and add salt, pepper, and lime juice.
