Mishti Doi is an iconic dessert from the Indian region of Bengala that is soft and sweet and fresh, made completely 100% plant-based! Made from vegetable milk that is slowly cooked until thick, sweetened with palm sugar, then slowly fermented until the texture is soft and dense like pudding with a soft sweet taste and With a hint of natural, refreshing sourness, this dish is truly special because it maintains its authentic, soothing flavor, without cow's milk or animal products. And served in a traditional way in a clay container which gives it a unique, distinctive aroma. Very delicious when eaten cold, with a sprinkling of chopped nuts.

🛒 Ingredients
- 800 ml pure soy milk/thin coconut milk/mixture of both
- 100 to 120 grams of palm sugar/coconut sugar, finely grated
- 2 to 3 tablespoons plain plant-based yogurt (as a fermentation starter)
- Some cashew nuts, chopped pistachios for sprinkling

Heat the vegetable milk over low heat while continuing to stir until the volume reduces by about a third and the texture is thicker.

Add the brown sugar and stir continuously until it dissolves completely and there are no lumps. Turn off the heat and let it cool to lukewarm (not hot, around 40°C).

Add the plant-based yogurt and stir gently until evenly distributed. Pour into a clay container or covered bowl.

Cover tightly, store in a warm place without disturbing for 6 to 8 hours until it hardens and expands.

Refrigerate for at least 2 hours before serving to further chill. Sprinkle chopped nuts on top. Your delicious treat is ready to be enjoyed!
