- 300 grams of watermelon flesh, cut into bite-sized cubes.
- 80 to 100 grams of feta-type vegetable cheese or coarsely crumbled salted tofu
- A handful of fresh mint leaves, roughly torn
- 1/2 small red onion, thinly sliced, soak in water for a while
- A few black olives and pine nuts (optional)

- 2 tablespoons olive oil
- 1 to 2 tablespoons lime/lemon juice
- A little coarse ground black pepper
- A little vegetable honey/liquid coconut sugar (optional)
