- Two large purple eggplants
- Two onions, finely chopped
- Two red tomatoes, finely chopped
- 3 cloves of garlic and 1 piece of ginger, finely chopped
- Two green/red chilies, sliced

- One teaspoon of turmeric powder
- One teaspoon of coriander powder
- 1/2 teaspoon chili powder
- Salt and sugar to taste
- A little lime juice

Grill the eggplant over the stovetop or in the oven until the skin is charred black and the flesh is perfectly tender. Remove, soak briefly in cold water, peel, and coarsely mash the eggplant flesh.

Heat oil, sauté onions until softened and brown. Add ginger, garlic, and chilies and sauté until fragrant.

Add all the ground spices, stir briefly, then add the tomatoes. Cook until the tomatoes are broken down and the sauce thickens.

Add the finely ground eggplant, stir well, cook slowly for 10 to 15 minutes so that the spices are absorbed perfectly.
