
Rajma Masala
Rajma Masala is an iconic dish from North India that is delicious and filling and is completely 100% plant-based! Red beans cooked until perfectly soft, soaking up the thick, savory sauce of fragrant spices, tomatoes and onions. This dish is very special because the soft, chewy texture of the peanuts is combined with the rich, slightly spicy, savory, and distinctively aromatic flavor of spices without any animal ingredients at all. Delicious served warm with basmati rice, naan bread, or flatbread, it makes a very satisfying main course!

🛒 Ingredients
- #the main ingredient:
- 250 grams of dried red beans, soak until they expand
- Two onions, finely sliced
- Three red tomatoes, pureed
- 3 cloves of garlic and 1 piece of ginger, finely chopped
- 2 tablespoons vegetable oil
- 700 to 800 ml water/vegetable stock
- #Masala spices;
- One teaspoon of turmeric powder
- One teaspoon of coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon chili powder (to taste)
- 1/2 teaspoon salt masala
- Salt and sugar to taste
- Fresh coriander leaves for sprinkling

Boil red beans in new water until soft but not broken, drain and set aside.

Heat oil, sauté onion until soft brown. Add ginger and finely chopped garlic, sauté until fragrant.

Add all the ground spices, stir quickly, then add the pureed tomatoes. Cook until the tomatoes break down and the oil separates from the spices.

Add the boiled red beans and enough water, bring to a boil, then reduce the heat. Cover and simmer for 20 to 25 minutes, until the sauce thickens and the spices are absorbed.

Add the salt masala and adjust to taste. Remove from heat, sprinkle with fresh coriander leaves, and serve warm. Your delicious meal is ready to be enjoyed!
