Berry Soup It is a fresh dessert typical of northern and central Europe, made entirely 100% plant-based! A combination of various fresh or frozen berries that are briefly cooked until the sauce is thick and aromatic, with a naturally balanced sweet and sour taste. This dish is very special because it can be served cold or warm, maintaining the freshness of the fruit and the variety of textures without any animal ingredients at all. It's delicious eaten straight or topped with vegetable cream, cake pieces, and a sprinkling of grated orange peel for a richer flavor.

🛒 Ingredients

  • 400 grams mixed berries (blueberries, strawberries, black currants or wild berries)
  • 600 ml water/coconut water
  • 3 to 4 tablespoons of granulated sugar/coconut sugar (adjust according to the acidity of the fruit)
  • Dissolve one tablespoon of cornstarch in a little water
  • A little grated orange peel and lime zest
  • Vegetable cream/fruit pieces for topping

    Add water, sugar and grated orange peel to a cooking pan until it boils and the sugar dissolves

    Add the berries, cook slowly for a short time so that the berries do not completely break down, just enough to release their juice.

    Pour in the cornstarch solution little by little while stirring until the sauce thickens slightly. Turn off the heat and add the lime juice.

    Serve warm or chill in the refrigerator for extra freshness. Serve with your choice of accompaniments!
