The creamy grayish soup has a natural, mild sourness from the wheat yeast, combined with tender potatoes, carrots, mushrooms and the distinctive aroma of bay leaves and marjoram. 🛒 Ingredients
- #the main ingredient:
- 500 to 600 ml of water and sour wheat (can be replaced with a mixture of two tablespoons of wheat vinegar + 1 tablespoon of water-soluble wheat flour)
- 700ml vegetable stock
- Two potatoes, diced
- One carrot, diced
- 100 grams of button mushrooms/oyster mushrooms, sliced
- One onion and 2 cloves of garlic, chopped
- 2 tablespoons vegetable oil
- #seasoning ingredients:
- Two bay leaves
- 1/2 teaspoon marjoram powder
- Black pepper, salt to taste
- A little sugar to balance the taste
- Fennel/parsley leaves for garnish

Heat oil, saute onion and garlic until fragrant. Add carrots and mushrooms, cook briefly until wilted

Pour in the vegetable stock, add the potatoes and spices. Bring to a boil, then reduce the heat and cook until the vegetables are half-cooked.

Pour in the sour yeast water slowly while stirring, cook slowly until it boils again.

Continue cooking until all the vegetables are tender and the flavors of the sauce are perfectly combined. Taste and adjust the sour, salty, and savory flavors.

Remove from heat, sprinkle with fresh parsley, and serve warm with whole wheat bread or boiled potatoes. Your meal is ready to be enjoyed!
