Leczo is a simple yet delicious Hungarian dish of stewed vegetables, completely 100% plant-based. A combination of colorful peppers, ripe tomatoes and onions slowly cooked until soft with a distinctive sweet paprika seasoning. This dish is very special because it highlights the natural flavor of fresh vegetables, the right combination of sweet and slightly spicy flavors, and a bright, appetizing appearance, without animal ingredients. Very easy to make, can be served as a side dish, pasta sauce, or main dish with rice or bread!

🛒 Ingredients
- #the main ingredient:
- Three bell peppers (red, yellow, green), seeds removed and diced
- Three fresh tomatoes, roughly chopped/200 grams canned tomatoes
- One onion, finely sliced
- 2 cloves garlic, chopped
- 2 tablespoons olive oil
- A little water if needed
- #seasoning ingredients:
- 1 to 2 teaspoons sweet paprika powder
- Salt and black pepper to taste
- A little sugar to balance the taste
- A few chopped basil/parsley leaves

Heat oil, sauté onions until translucent, add garlic and sauté briefly until fragrant.

Add the bell pepper pieces, stir well and cook for 5 minutes until slightly wilted.

Add the tomatoes and all the spices and stir well. Cook over low heat, covered, for 20 minutes, until the vegetables are tender and the sauce has thickened.
