🛒 Ingredients
- 500 grams of fresh carrots, peeled and then finely grated
- 500 ml vegetable milk (thin coconut milk/soy milk/almond milk)
- 120 to 150 grams of granulated sugar/coconut sugar
- 2 tablespoons vegetable butter
- 1/2 teaspoon cardamom powder
- Chopped almonds/cashews and enough raisins for sprinkling

Add the grated carrots and vegetable milk to a wide pan, cook over medium heat, stirring occasionally, until the vegetable milk has reduced and the carrots are soft.

Add sugar, stir continuously until the sugar dissolves and the liquid comes out again, cook until the liquid is gone.

Add vegetable shortening and cardamom, cook slowly while stirring until the mixture is oily, thickens, and pulls away from the sides of the pan.

Add some of the nuts and raisins and stir well. Remove from heat and sprinkle the remaining nuts on top. Serve warm or cold, depending on your preference. Your dish is ready to be enjoyed!
