🛒 Ingredients

  • #the main ingredient:
  • Two medium sized red beets, peeled, coarsely grated/cut into matchsticks
  • One carrot, cut into matchsticks
  • Two potatoes, diced
  • 150 grams of white cabbage, finely sliced
  • One onion and 2 cloves of garlic, chopped
  • Two fresh tomatoes, pureed/2 tablespoons tomato sauce
  • 700 to 800ml vegetable stock
  • 2 tablespoons olive oil
  • One tablespoon of apple cider vinegar/lime juice
  • #seasoning ingredients:
  • Salt, sugar, black pepper to taste
  • A few fresh parsley and dill leaves
  • Vegetable whipped cream for topping

    Heat oil, saute onion and garlic until fragrant. Add red beets and carrots, cook briefly.

    Add the pureed tomatoes, stir well, then pour in the vegetable stock. Cook until boiling.

    Add potatoes and cabbage, reduce heat, cook slowly for 25 to 30 minutes until all vegetables are tender

    Add salt, sugar, pepper, and apple cider vinegar/lime to balance the flavors.

    Turn off the heat and sprinkle with fresh leaves. Serve warm with a dollop of vegetable cream on top. Your delicious dish is ready to be enjoyed!
