Schmorgurken is a unique and delicious traditional German vegetable dish, served completely 100% plant-based! Cucumbers cooked slowly until soft but still textured, combined with a thick, savory sauce and the distinctive aroma of fennel. This dish is very special because it transforms ordinary cucumber into a dish that I feel, a combination of the natural fresh taste of cucumber with the soft savory creamy sauce, without using animal ingredients. It's delicious served as a side dish with rice, boiled potatoes, or as a light yet filling main dish!

🛒 Ingredients
- #the main ingredient:
- Two large cucumbers, peel the skin, remove the seeds and then cut them into thick cross-sections.
- One small onion, finely sliced
- One tablespoon of vegetable butter/olive oil
- 150ml vegetable stock
- 100 ml vegetable cooking cream/thin coconut milk
- #seasoning ingredients:
- One teaspoon chopped fresh/dried fennel
- Salt and white pepper to taste
- A little granulated sugar
- One teaspoon of cornstarch dissolved in a little water (if you want it thicker)

Heat vegetable butter/oil, sauté onions until wilted and fragrant.

Add the cucumber slices and stir gently for a moment. Pour in the vegetable stock, bring to a boil, then reduce the heat, cover, and cook for 10 to 15 minutes, until the cucumber is tender but not falling apart.

Stir in the vegetable cream, dill, salt, pepper and sugar. Cook for a while

If the sauce is not thick enough, add the cornstarch solution little by little while stirring until it reaches the desired consistency.

Taste, remove from heat, and serve warm. Your delicious meal is ready to be enjoyed!
