🛒 Ingredients
- #the main ingredient:
- 300 grams of oyster mushrooms/button mushrooms, clean then cut into pieces
- 200 ml thick coconut milk
- 300 ml water
- One carrot/potato slice (optional)
- 2 tablespoons oil for sauteing
- #ground spices:
- 4 cloves of garlic
- Three shallots
- 2 candlenuts
- One piece of turmeric
- One piece of ginger
- One teaspoon of ground coriander
- 1/2 teaspoon cumin and ground pepper
- #Whole spices;
- One stalk of lemongrass, bruised
- Two lime leaves and 1 bay leaf
- One segment of galangal, bruised
- Salt, brown sugar to taste

Heat the oil, sauté the ground spices with the whole spices until fragrant and perfectly cooked.

Add mushrooms and additional vegetables if any, stir well for a while.

Pour in the water and cook until it boils. Reduce the heat and slowly pour in the coconut milk, stirring constantly to prevent it from curdling.

Add salt and brown sugar, cook slowly while stirring occasionally until the spices are absorbed and the sauce thickens.

Taste and adjust the seasoning, then remove from heat and serve warm. Your dish is ready to be enjoyed!
