🛒 Ingredients
- #the main ingredient;
- 300 grams of fresh bendi, wash clean, dry then cut obliquely
- Two onions, finely sliced
- Two red tomatoes, diced
- 2 cloves of garlic and 1 piece of ginger, finely chopped
- One red chili, sliced diagonally (optional)
- 2 tablespoons of cooking oil
- #seasoning ingredients;
- One teaspoon of turmeric powder
- One teaspoon of coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon chili powder (to taste)
- Salt and sugar to taste
- A pinch of sour mango powder (optional)

Heat 1 tablespoon of oil, add the bendi, and sauté briefly over medium heat until the surface is slightly dry and no longer slimy. Remove and set aside.

Heat the remaining oil, sauté the onions until they turn brown, add the ginger, finely chopped garlic and chilies, sauté until fragrant.

Add all the powdered spices, stir quickly for a while, then add the tomato pieces. Cook until the tomatoes break down and combine into a thick powder.

Return the bendi to the pot and stir gently to coat evenly with the spices. Cook briefly to ensure the bendi remains crispy and the spices are absorbed.
