French Panade is a delicious and comforting traditional French warm dish, made entirely 100% plant-based! Bread soaked in a spiced vegetable broth, cooked with fresh vegetables until its soft texture blends with the thick, savory sauce. This dish is so special because it turns simple ingredients into a dish that I find hearty and very filling, without using any meat or animal products. Its soft savory taste with a subtle aroma of spices is perfect for enjoying in cool weather or as a healthy everyday dish!

🛒 Ingredients
- #The main ingredient:
- 200 grams of white bread/hard bread, cut into cubes for the crust if you like
- One onion, roughly sliced
- 2 cloves garlic, chopped
- One carrot, diced
- 100 grams of mushrooms, cut into pieces
- One stalk of celery, sliced
- One tablespoon of olive oil/vegetable butter
- 600 to 700 ml warm vegetable stock
- #Seasoning ingredients:
- Bay leaves, fresh thyme to taste
- Salt, black pepper, a little nutmeg powder
- Chopped parsley for sprinkling

Heat vegetable oil/butter, sauté the onion and garlic until fragrant and wilted. Add the carrots, celery, and mushrooms and cook briefly until wilted.

Add the bread pieces and stir gently. Gradually pour in the warm vegetable stock while stirring.

Add the bay leaves, thyme, salt, pepper, and nutmeg. Cook over low heat for 25 minutes, stirring occasionally, until the bread has crumbled and the sauce has thickened.

Taste and adjust seasoning, remove from heat, and garnish with fresh parsley. Serve warm!
