Fyrstekake

Fyrstekake It is a traditional Norwegian cake that is rich in flavor and fragrant with spices, served completely 100% plant-based! Made from soft cake dough filled with sweet almond filling, scented with cardamom and vanilla, then baked until the surface is beautifully brown. This cake is very special because it combines a slightly crunchy outer texture with a moist and dense interior, without using eggs, butter, or animal milk. It has a subtle sweetness with a distinctive spice, and is delicious served warm with plant-based whipped cream or plant-based ice cream for a special dessert!

🛒 Ingredients

  • 200 grams of wheat flour
  • 80 grams of powdered sugar
  • 120 grams cold vegetable butter
  • One tablespoon of plant-based milk
  • A pinch of salt
  • A little vanilla extract
  • 150 grams of ground almonds
  • 80 grams of granulated sugar
  • One tablespoon of wheat flour (as an ingredient for the almond filling)
  • 1/2 teaspoon cardamom powder
  • 2 to 3 tablespoons of plant-based milk
  • A little vanilla extract
  • A little bit of lemon zest (optional)
  • A little vegetable milk for brushing
  • Powdered sugar for sprinkling

👩‍🍳 Instructions

  1. 1

To make the crust: Mix flour, powdered sugar, and salt. Add cold vegetable shortening and stir until coarse, sand-like crumbs form. Add the milk and vanilla, knead gently until the dough comes together. Divide the dough in half, flatten it, wrap it in plastic wrap, and refrigerate for 20 minutes.

  2. 2

Make the filling: Mix the ground almonds, sugar, flour, and cardamom. Gradually add the milk while stirring until it forms a thick, pliable dough. Add the vanilla and a dash of lemon zest.

  3. 3

Assemble the cake: take one portion of the dough, roll it out thinly, arrange it in a greased pie pan. Add the entire almond filling and crack the surface. If there is any remaining dough, cover the top and press the edges to seal.

  4. 4

Bake: Brush the surface with a little vegetable milk, bake in a preheated oven at 170°C for 35 to 40 minutes until cooked and golden brown.

  5. 5

Serve: Let cool slightly, sprinkle with powdered sugar, and cut into pieces. Enjoy warm or at room temperature!
