🛒 Ingredients
- 100 ml water Green bean extract (liquid from a can of white green beans)
- 150 grams of fine granulated sugar
- 1/2 teaspoon vanilla extract
- A pinch of salt
- 200 ml vegetable whipped cream (ready-to-use or whipped)
- 300 grams of fresh strawberries
- 2 tablespoons of granulated sugar
- A little lime juice
- Chopped nuts or cookie toppings (optional)

Make the meringue: beat the water, chickpea extract, and salt until frothy, then add the sugar little by little while continuing to beat until the mixture becomes stiff, shiny, and forms firm peaks. Add the vanilla and stir gently. Spray or arrange on a baking sheet lined with parchment paper and bake at 100°C for 60 minutes, until dry and crispy. Turn off the oven and let it cool slowly in the oven. Once cool, break it into rough pieces.

Prepare the fruit: Take some strawberries and roughly mash them with sugar and lime juice. Cut the rest into whole pieces. Let them sit for a while to release their juice.

Assemble the dish: Whip the cream until stiff peaks form. Layer the cream in the glass; start with the strawberry sauce, add the meringue pieces, then whisk again, repeating until full.

To serve: Garnish the top with fresh strawberry slices and the remaining meringue flakes. Serve immediately to keep the meringue crisp!
