🛒 Ingredients
- 200 grams of wet noodles/rice noodles, boil until cooked then drain
- 150 grams of firm tofu, cut into cubes/lengths
- One bunch of green mustard greens/pak choy, cut into pieces
- 2 cloves garlic, finely chopped
- Two cloves of shallots, thinly sliced
- One stalk of spring onion, sliced eggplant
- One tablespoon of vegetable soy sauce
- One tablespoon of sweet soy sauce
- 1/2 teaspoon chili powder (to taste)
- A little salt, sugar and ground pepper
- 300 to 400 ml vegetable stock
- One tablespoon of garlic oil (optional)

Heat oil, saute shallots and garlic until fragrant and golden

Add the tofu, stir gently until slightly browned, then pour in the vegetable stock.

Combine all the seasonings, such as vegetable soy sauce, sweet soy sauce, chili powder, salt, sugar, ground pepper, and garlic oil. Stir well and let simmer for a while to blend the flavors.

Add the green vegetables, cook briefly until they wilt but remain crispy.
