🛒 Ingredients
- 50 grams of fine wheat bran
- One large bunch of parsley, very finely chopped
- 5 fresh mint leaves, finely chopped
- Two red tomatoes, cut into very small cubes
- One cucumber, remove the seeds and cut into small cubes
- One small onion/shallot, very finely sliced
- 3 to 4 tablespoons of extra virgin olive oil
- 2 to 3 tablespoons fresh lime/lemon juice
- Fine salt to taste
- A little ground black pepper

Soak the wheat bran in warm water for 15 to 20 minutes until soft, then drain well and squeeze a little so that it is not too wet.

In a large bowl, add the wheat bran, parsley, mint leaves, tomatoes, cucumbers, and onions. Stir gently until all ingredients are well combined.

In a separate bowl, combine the olive oil, lime juice, salt, and pepper. Whisk until combined.

Pour the sauce into the vegetable mixture and stir gently. Taste for seasoning and adjust if necessary.

Refrigerate for at least 30 minutes before serving to allow the flavors to fully absorb and the dish to taste even fresher. Serve chilled with fresh lettuce, if desired.
