Soft, smooth-textured butter beans are combined with sweet cherry tomatoes, fresh herbs, and a refreshing, tangy olive oil dressing. 🛒 Ingredients

  • 250 grams of cooked, boiled butter beans (you can use fresh or canned ones that have been rinsed)
  • 150 grams cherry tomatoes, halved
  • 1/2 small onion, thinly sliced
  • Fresh basil/parsley leaves to taste
  • A few slices of black/green olives (optional)
  • 3 tablespoons olive oil
  • 1 to 2 tablespoons apple/lemon juice
  • 1 clove of finely chopped garlic
  • Salt and black pepper to taste
  • A little granulated sugar/coconut sugar (optional)

    Prepare a large bowl, add butter beans, cherry tomatoes, onions and fresh herbs.

    In a separate bowl, make a dressing by combining olive oil, apple cider vinegar, finely chopped garlic, salt, black pepper, and granulated sugar/coconut sugar. Stir well until the flavors are combined.

    Pour the sauce over the vegetable and bean mixture, stir gently until evenly coated.

    Let it sit for about 10 to 15 minutes to let the spices soak in, then serve fresh or chill it briefly in the refrigerator. Your salad is ready to enjoy!
