🛒 Ingredients
- 350 grams of good quality firm white tofu/yellow tofu, drain a little of the water and cut into long pieces according to your taste.
- Enough skewers
- Enough vegetable oil for baking
- 4 cloves of garlic, finely chopped
- Three shallots, finely chopped
- One teaspoon of roasted coriander powder
- 1/2 teaspoon ground cumin
- One piece of grated ginger
- 2 tablespoons sweet soy sauce
- One tablespoon of vegetable oil
- A little salt, ground pepper, and grated brown sugar to taste (as a marinade)
- 120 grams of peanuts, roasted until cooked then coarsely/medium ground
- 3 cloves of garlic + three shallots, finely chopped
- Two lime leaves, remove the veins
- One bay leaf
- 3 tablespoons sweet soy sauce
- One tablespoon of grated brown sugar
- Salt to taste (as a peanut sauce)
- 250 to 300 ml of boiled water
- One tablespoon of oil for frying (like peanut sauce)
- Lime juice to taste

Marinate the tofu: prepare a bowl, mix all the marinade ingredients until evenly mixed. Add the tofu pieces, stir gently so that the seasoning evenly covers the entire surface of the tofu without breaking it. Let it sit for 15 to 20 minutes so that the spices can penetrate the tofu fibers. After that, skewer the tofu with enough satay, don't stuff it too tightly so it cooks evenly.

Make peanut sauce: heat a little oil in a pan, sauté the ground spices with lime leaves and bay leaves until fragrant and cooked through. Add the ground peanuts, slowly pour in the water while stirring thoroughly. Add the brown sugar, salt, and sweet soy sauce. Cook over low heat, stirring occasionally, until the sauce thickens, becomes oily, and the flavors blend perfectly. Turn off the heat, then add the lime juice, stir well, and set aside.

Grilling the satay: Prepare a non-stick frying pan or frying pan. Brush a little oil on it. Arrange the satay skewers and grill over medium-low heat. Occasionally, brush with the remaining marinade and a little peanut sauce, turning occasionally. Cook until the entire surface of the tofu is beautifully browned, slightly crispy, and fragrant. Don't cook for too long so that the tofu doesn't become hard.

Serving: Arrange the tofu satay on a serving plate, pour the peanut sauce over it or serve separately. Add lime slices, shallot slices, and cayenne pepper to taste. Enjoy while warm!
