Sayur lodeh is a very popular and loved vegetable soup dish in coconut milk throughout Indonesia, completely 100% plant-based! Contains a variety of fresh vegetables cooked slowly in thick coconut milk sauce combined with fragrant Indonesian spices. Without meat or animal products, it has a soft savory taste, a little natural sweetness from coconut milk and a rich aroma of spices that permeates perfectly into each vegetable. 🛒 Ingredients
- One chayote, diced (as main ingredient)
- One carrot, cut obliquely (as the main ingredient)
- One sweet corn, cut into rounds (as the main ingredient)
- 10 long beans, cut into finger-sized pieces (as the main ingredient)
- 100 grams of soft boiled tolo beans/red beans, optional (as the main ingredient)
- One block of tempeh, diced. Optional (as the main ingredient)
- 500 ml medium coconut milk (as the main ingredient)
- 300 ml water (as the main ingredient)
- Two bay leaves, one stalk of bruised lemongrass, 2 lime leaves (as the main ingredient)
- 5 cloves of shallots (as a ground spice)
- 3 cloves of garlic(as bamboo that has been ground)
- Three roasted candlenuts (as a seasoning)
- One piece of ginger and turmeric (as a seasoning)
- One teaspoon of coriander seeds (As a seasoning ingredient)
- Salt, brown sugar and mushroom stock to taste (as a seasoning)

Saute the spices: saute the ground spices with bay leaves, lemongrass and lime leaves until fragrant and perfectly cooked.

Cook the vegetables: Add water and bring to a boil. Add vegetables that require longer cooking time first (corn, carrots, pumpkin), and cook until half tender.

Add coconut milk: add the remaining vegetables and coconut milk, stir gently over low heat so that the coconut milk does not separate.

Season: Add salt, brown sugar, and mushroom stock. Cook until all the vegetables are fully cooked and the spices are absorbed.

Serve: Remove and serve warm with white rice!
