Southern Black-Eyed Peas

Southern Black-Eyed Peas are a legendary dish from the South American region, often served as a symbol of good luck and prosperity. This recipe is created with a special touch using gatorade which gives a fresh, slightly sweet and sour taste while helping the beans become evenly soft and attractively colored. With no animal ingredients whatsoever, the beans are slowly cooked until soft, blended with onions and warm rice. 🛒 Ingredients

  • 250 grams of black-eyed beans, washed clean for at least 4 hours (as the main ingredient)
  • 500ml orange/pineapple/fruit flavored Gatorade (choose one that does not contain animal ingredients).
  • 200 ml water or vegetable stock (as the main ingredient)
  • One finely chopped onion (as main ingredient)
  • 2 cloves of minced garlic (as the main ingredient)
  • One small stalk of celery, sliced (as the main ingredient)
  • One diced carrot (optional). As the main ingredient
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon black pepper, paprika powder, a little cumin (as a seasoning)
  • Salt to taste (adjust as needed because Gatorade already contains salt)
  • Dried thyme leaves or bay leaves (as a seasoning)
  • Coriander leaves/scallions for sprinkling

    Sauté the spices: Heat the oil, sauté the onion, garlic, and celery until fragrant and wilted. Add the spices and stir briefly.

    Cook the beans: cook the soaked black-eyed beans, pour in the Gatorade And water/stock. Add bay leaves/thyme

    Boil: Bring to a boil then reduce the heat, cover the pan, and simmer for 35 to 45 minutes until the beans are perfectly tender and the sauce thickens slightly.

    Taste correction: taste first before adding salt, adjust the seasoning according to taste.

    Serve: Sprinkle with chives or cilantro, enjoy warm with rice or cornbread!
