🛒 Ingredients
- 3 to 4 medium sized potatoes, peeled and cut into small cubes (as the main ingredient)
- One onion, diced (as main ingredient)
- 2 cloves garlic, chopped (as the main ingredient)
- Two ripe red tomatoes, diced (as the main ingredient)
- 2 to 3 jalapeno chilies/curly green chilies, thinly sliced (as the main ingredient)
- 3 tablespoons vegetable oil
- A little water
- Salt and pepper to taste (as seasoning)
- Chopped fresh coriander leaves
- Lime zest (optional)

Cook potatoes: heat oil, add potatoes, cook over medium heat until slightly browned and half cooked

Saute the spices: add the onions, garlic and chilies, stir until fragrant and wilted.

Cook together: add the tomato pieces, add a little water, cover the pan for a while until the tomatoes break down and combine into a sauce and the potatoes are cooked perfectly and the spices are absorbed.
