
Cilantro Lime Cauliflower Rice
Cilantro Lime Cauliflower Rice is a light, fresh, and healthy alternative to rice. It's completely plant-based! Cauliflower that is grated or blended roughly to resemble rice grains, cooked briefly until cooked through but remains crispy and soft, then seasoned with fresh lime juice and chopped coriander leaves. No rice, no animal ingredients, it tastes very fresh, fragrant, slightly sour which is appetizing, and is much lighter but still filling. Perfect as an accompaniment to spicy dishes, a healthy menu choice, or for those looking to reduce their carbohydrate intake!

🛒 Ingredients
- One medium sized cauliflower, cut into florets
- One tablespoon of olive oil/vegetable oil
- Two cloves of garlic, finely chopped
- 3 to 4 tablespoons fresh coriander leaves, finely chopped
- Salt and black pepper to taste
- A little grated lime peel (optional)

Puree the cauliflower: Place the cauliflower florets in a blender and blend briefly until roughly ground to resemble rice grains (not too finely). Or grate using a cheese grater.

Cooking: Heat oil, sauté garlic briefly until fragrant. Add cauliflower, stir well, and cook over medium heat for 5 to 7 minutes, until cooked through but still crispy (don't let it get too soft).

Seasoning: Turn off the heat, add the lime juice, coriander leaves, salt, pepper, and lime zest. Stir well and adjust the seasoning.
