Roasted Root Veg is a simple yet incredibly delicious and nutritious dish, completely 100% plant-based! Various types of root vegetables such as carrots, potatoes, sweet potatoes, turnips and parsnips are cut uniformly, then slowly roasted until the surface is brown and crispy.While the inside becomes very soft and naturally sweet. No animal ingredients, just seasoned with olive oil, onions and simple spices. It has a very deep, savory, naturally sweet taste and its texture is very alluring, making it the perfect companion that soothes the heart!

🛒 Ingredients
- Two carrots, cut lengthwise (as the main ingredient)
- Two medium-sized potatoes, cut into large cubes (as the main ingredient)
- One sweet potato/yellow, cut into similar pieces (as the main ingredient)
- One white radish/parsnip if available. (As main ingredient)
- 2 whole cloves of garlic or roughly chopped (as the main ingredient)
- 3 to 4 tablespoons olive oil (as the main ingredient)
- Coarse salt, coarse black pepper to taste (as seasoning)
- 1/2 teaspoon dried Rosemary, Thyme, or oregano (for seasoning)
- A pinch of paprika or cumin powder, optional. (For seasoning)
- Fresh parsley leaves for sprinkling

Prepare the vegetables: preheat the oven to 200°C, mix all the vegetables and onions in a large bowl, pour in the olive oil and all the spices, mix well until completely coated.

Bake: Spread the vegetables evenly on the baking sheet (do not pile them up) bake for 35 minutes, turning occasionally until evenly cooked, browned and tender when pierced with a fork.

Serve: Remove from heat, sprinkle with fresh parsley, and enjoy warm!
