Mole is a legendary and very iconic dish from Mexico, known for its incredibly complex blend of flavors, it is served completely plant-based or 100% plant-based! The sauce is made from a mixture of dried chilies, spices, nuts and a little pure, non-dairy chocolate, which is slowly cooked until it becomes a thick, dark sauce. Without meat or animal ingredients, the taste is truly unique: a combination of sugar, a hint of spiciness, the soft sweetness of chocolate, and the deep aroma of spices. 🛒 Ingredients
- Selected vegetables (potatoes, carrots, green beans, pumpkin) or sliced tofu/tempeh
- Olive oil to taste
- 3 to 4 dried chilies, remove seeds and roast briefly (as a sauce ingredient)
- One large onion, chopped (as a sauce ingredient)
- Three cloves of garlic (as a sauce ingredient)
- 50 grams of roasted cashew nuts/almonds/sesame seeds (As a sauce ingredient)
- One teaspoon of coriander seeds, cumin, cinnamon, cloves (as sauce ingredients)
- One large ripe tomato (for the sauce)
- One tablespoon of coconut sugar/brown sugar (as a sauce ingredient)
- 30 grams of pure dark chocolate (without milk) as a sauce ingredient
- 500 to 600 ml water/vegetable stock (as a sauce ingredient)
- And salt to taste

Prepare the ingredients: Soak the dried chilies in hot water until soft. Roast all the spices and nuts until fragrant.

Blend: Put the chilies, onions, tomatoes, nuts and spices into a blender, add a little water, blend until very smooth.

Cook the sauce: sauté the smooth mixture with a little oil over low heat for 15 to 20 minutes to allow the flavors to develop perfectly. Add the remaining water/stock, chocolate, and sugar. Stir until the chocolate melts and the sauce thickens.

Cook the filling: Add the vegetables/tofu, cook slowly until cooked through and the spices are absorbed. Adjust the seasoning with salt.
