Bunny Chow It is a very famous iconic dish from South Africa now served completely plant-based or 100% plant-based! This dish consists of white bread that has been scooped out in the middle and filled with thick, savory, spiced vegetable curry. Without meat, the filling uses a variety of fresh vegetarian. And the beans are slowly cooked in a fragrant curry sauce, slightly spicy and very rich in flavor. 🛒 Ingredients
- Two large pieces of white bread/whole wheat bread for the middle of the stomach
- Two potatoes, cut into large cubes
- One carrot, diced
- 100 grams of green beans/long beans, cut into short pieces
- 100 grams of soft boiled white beans/red beans
- One chopped onion
- 2 cloves of minced garlic
- One piece of grated ginger
- 3 tablespoons vegetable oil
- 300 to 400 ml water/vegetable stock
- One tablespoon of curry powder (for curry seasoning)
- 1/2 teaspoon turmeric powder, cumin powder, coriander powder (as curry spices)
- Salt, sugar and pepper to taste (as curry seasoning)
- A pinch of coriander for sprinkling

Sauté the spices: Heat the oil and sauté the onion, garlic, and ginger until fragrant. Add all the ground spices and stir quickly to prevent burning.

Cook the filling: Add the potatoes and carrots and stir well. Pour in the water/stock and bring to a boil. Reduce the heat and cover and cook until the vegetables are half-tender.

Add: Add the green beans and peanuts, and cook again until the sauce thickens and all the vegetables are cooked through. Adjust the seasoning.

Fill the roti: put the vegetable curry into the cavity of the prepared roti until it is full
