Hoppin' John It is a very traditional, eco-friendly dish from the Southern United States, often served to bring good luck at the start of the year, now served 100% plant-based! Combining tender black beans/peas with rice cooked with warm spices, onions, peppers, and tomatoes. Without meat or animal products, it has a deep, savory flavor, a little spicy, very filling, and is a delicious and nutritious symbol of hope and prosperity!

🛒 Ingredients
- 150 grams of black beans/peas, washed clean and soaked for at least 4 hours (Or wash and soak it yourself)
- 200 grams of white/basmani rice, washed clean
- One onion, finely chopped
- 2 cloves garlic, chopped
- 1/2 green/red bell pepper, diced
- One ripe tomato, chopped or 2 tablespoons tomato sauce
- 700 to 800 ml water or vegetable stock
- 2 tablespoons vegetable oil
- 1/2 teaspoon paprika powder, cumin, black pepper (as a seasoning)
- 1/2 teaspoon dried thyme leaves (as a seasoning)
- Salt and a little sugar to taste (as seasoning)
- Try the powder according to your taste for spiciness (as a seasoning)

Boil the beans: boil the beans until they are soft but not broken apart, drain. Then make Saute the spices: heat the oil, saute the onions, garlic and paprika until fragrant. Add all the spices and tomatoes, cook for a while.

Cook the rice: Add the rice and beans and stir well. Pour in the water/stock and cook until boiling.

Finish: reduce heat, cover the pan tightly, cook for 20 to 25 minutes until the water is completely gone and the rice is cooked perfectly.

Serve: Stir gently, enjoy warm with sauteed vegetables or cornbread!
