
Pasulj
Pasulj is a much-loved national dish from Serbia and the Balkan region, now served completely plant-based! This dish is a thick soup made from white beans that are slowly cooked until tender, combined with a savory tomato sauce and warm spices, without meat or animal products. It's rich, warm, slightly spicy, and very filling. Presenting authentic, simple yet warm traditional flavors of home-cooked cuisine typical of the region!

🛒 Ingredients
- One large onion, finely chopped
- 3 cloves garlic, chopped
- One carrot, cut into small cubes
- Two chopped ripe tomatoes or 3 tablespoons tomato sauce
- 1 liter of water or vegetable stock
- 2 tablespoons vegetable oil
- One teaspoon of sweet/slightly spicy paprika powder, as a seasoning
- 1/2 teaspoon black pepper, salt to taste. as seasoning ingredients
- A few bay leaves and chopped parsley, for seasoning
- A little sugar if needed to balance the taste
- 250 grams of large white beans (pasulj beans) that have been washed clean and soaked for at least 4 hours

Boil the beans: boil the white beans in clean water until completely soft, drain (you can use the boiling water for the sauce)

Saute the spices: heat the oil, saute the onions until they are soft, add the garlic, carrots and paprika powder until fragrant.

Cook the sauce: add the tomatoes/tomato sauce, water/stock, and bay leaves. Bring to a boil, then add the softened beans.

Marinate the spices: Cook over low heat for 20 to 25 minutes until the sauce thickens and the spices are absorbed. Adjust the seasoning with salt and pepper.

Serve: sprinkle with fresh parsley, enjoy warm with whole wheat bread!
