Sup Minestrone

Minestrone soup is a legendary Italian vegetable soup dish that is incredibly rich in flavor and filling, served completely plant-based or with a 100% plant-based base! Contains a variety of fresh vegetables, beans, and small pieces of pasta cooked slowly in a savory vegetable broth flavored with spices and tomatoes. Without meat or animal products, it is warm, thick, balanced between the savory spices and the natural sweetness of the vegetables, very satisfying and makes a heart-soothing and nutritious meal!

🛒 Ingredients

  • One onion, finely chopped
  • 2 cloves garlic, finely chopped
  • One carrot, cut into small cubes
  • One stalk of celery, thinly sliced
  • One chayote/zucchini, cut into cubes
  • Two chopped tomatoes or 200 grams of tomato sauce
  • 100 grams of soft boiled red beans/white beans
  • 50 grams of small pasta (small macaroni, small pipes)
  • 1.2 liters of vegetable stock
  • 2 tablespoons olive oil
  • 1/2 teaspoon dried basil, oregano, salt, and black pepper to taste as seasoning ingredients
  • Spinach leaves/green mustard greens to taste as a complement
  • Chopped parsley and grated vegetable cheese (optional)

    Sauté the spices: Heat the olive oil and sauté the onion and garlic until fragrant. Add the carrots, celery, and pumpkin, stir well, and cook briefly.

    Cook the sauce: add the tomatoes/tomato sauce, vegetable stock, and spices. Bring to a boil, then reduce the heat and cover the pan and cook for 15 minutes.

    Add the filling: Add the beans and pasta, and cook for another 10 to 12 minutes, until the pasta is cooked through. Finally, add the greens and cook briefly until they wilt.

    Taste correction: adjust salt and spices to taste.

    Serve: Enjoy warm, garnish with your favorite toppings!
