🛒 Ingredients
- 150 grams of farro beans, washed clean
- 1 liter of water or vegetable stock for boiling
- 1/2 cucumber, cut into small cubes
- 1/2 red bell pepper, diced
- 100 grams cherry tomatoes, halved
- 50 grams of roasted cashew nuts/almonds, roughly chopped
- One bunch of young spinach/lettuce, roughly torn
- Fresh parsley/basil leaves to taste
- 3 tablespoons extra virgin olive oil As a sauce ingredient
- 2 tablespoons lime/lemon juice . As a sauce ingredient
- One teaspoon of apple cider vinegar . As a sauce ingredient
- One clove of garlic, finely chopped . As a sauce ingredient
- Salt, pepper and a little oregano powder to taste . As a sauce ingredient

Boil the farro: Cook the farro in boiling, stirring, water for 25 to 30 minutes, until tender but still chewy. Drain and let cool completely.

Make the sauce: mix all the sauce ingredients until smooth and the flavors blend.

Mix everything: put the cooled farro and all the vegetables and beans into a large bowl.

Seasoning: Pour in the sauce, stir gently until everything is evenly coated.

Serve: can be served immediately or let it sit in the fridge for a while to let the flavors soak in!
