Sheet-Pan Roasted Mushrooms and Spinach It is a very practical, healthy and delicious dish, completely 100% plant-based! A variety of mushrooms are grilled to give off a natural savory aroma and are slightly crispy on the edges, combined with fresh spinach that is gently wilted and still retains its fresh color. No animal ingredients, just seasoned with olive oil, garlic, and simple spices. Perfect as a side dish, bread filling or light main dish that is rich in flavor, nutrition and saves cooking time!

🛒 Ingredients

  • 250 grams of mixed mushrooms (button mushrooms, oyster mushrooms, shiitake mushrooms), clean and cut into pieces
  • 150 grams of fresh spinach leaves, remove coarse stems
  • 2 cloves garlic, thinly sliced or minced
  • One tablespoon of olive oil
  • Salt, coarse black pepper to taste
  • 1/2 teaspoon ground thyme or oregano (optional)
  • A hint of lime when serving

    Prepare the ingredients: Preheat oven to 200°C. Arrange the mushrooms on a baking sheet lined with parchment paper, sprinkle with garlic, drizzle with olive oil, and season with salt, pepper, and herbs. Mix well.

    Bake: Place in the oven and bake for 12 to 15 minutes until the mushrooms release their water, turn brown and smell fragrant.

    Add spinach: remove the pan for a moment, sprinkle fresh spinach over the mushrooms, stir a little to combine. Place back in the oven for just 2 to 3 minutes until the spinach is soft and wilted.

    Serve: Remove from heat, add a little squeeze of lime, and enjoy warm!
