🛒 Ingredients
- 200 grams of young papaya, peeled then grated coarsely lengthwise
- 50 grams of carrots, grated similarly
- Three long beans, cut into short pieces
- Two cherry tomatoes, halved
- 2 tablespoons roasted peanuts, coarsely ground
- Fresh coriander leaves to taste
- 2 to 3 cloves of garlic
- 2 to 5 bird's eye chilies (adjust to your taste)
- One tablespoon of grated coconut sugar/brown sugar
- 3 tablespoons fresh lime juice
- One tablespoon of tamarind sauce (optional)

Spice mix: Puree the garlic and chilies, add the sugar, and grind roughly. Add the peanuts, some at a time, and grind briefly to maintain a coarse texture.

Mix the ingredients: add the long beans and tomatoes, press them lightly to release the juice. Add the papaya and grated carrots.

Seasoning: Pour in lime juice and soy sauce, stir or grind slowly until all the spices are evenly distributed and the taste is balanced.

Serve: transfer to a plate, sprinkle with the remaining peanuts and cilantro, and enjoy immediately to keep them crispy!
