Stuffed & grilled vegetable bites are a very interesting and delicious dish, completely plant-based and 100% plant-based! Thin sheets of vegetables such as eggplant or cincini are rolled with a savory filling of tofu, breadcrumbs, and spices. Then it is stabbed and burned until a beautiful, fragrant burnt mark appears. Without meat or animal products, each bite provides a combination of a soft, slightly crunchy outer texture with a dense, savory, spice-scented filling. Perfect for a party snack, a classy appetizer or a side dish that everyone will love!

🛒 Ingredients
- One large eggplant or zucchini, thinly sliced lengthwise
- A pinch of salt to soften the vegetables
- 150 grams of firm tofu, coarsely ground
- 3 tablespoons vegetable breadcrumbs
- 2 cloves garlic, finely chopped
- One stalk of spring onion, finely sliced
- 1/2 teaspoon paprika powder, oregano, black pepper and salt to taste as filling ingredients
- One tablespoon nutritional yeast (optional)
- Olive oil to taste
- Small skewers as a complement
- Vegetable dipping sauce or lemon flavoring as a complementary ingredient

Prepare the vegetables: coat the eggplant/zucchini slices with a little salt, let them sit for 10 minutes then squeeze out the water so they don't get mushy.

Make the filling: mix all the filling ingredients until they are evenly mixed and can be shaped.

Roll and skewer: place a little dough on the end of the vegetable slice, roll it up neatly, then secure it with a skewer so it doesn't come loose.

Grill: Drizzle a little oil on the surface of the vegetables, grill them in a grill pan or roasting pan until they are evenly cooked and have brownish grill marks.
