🛒 Ingredients
- 250 grams of short grain rice (Arborio rice or regular rice will also work)
- One onion, finely chopped
- 2 cloves garlic, chopped
- 1/2 red bell pepper and 1/2 yellow bell pepper, diced
- 100 grams of green beans, cut into short pieces
- One ripe tomato, finely chopped
- 700 ml warm vegetable stock
- 1/2 teaspoon turmeric powder or a little saffron powder
- 1/2 teaspoon sweet paprika powder
- Salt and black pepper to taste
- Lemon slices for serving

Sauté the spices: heat the olive oil in a flat pan typical for paela, sauté the onion until soft, add the garlic and paprika, cook briefly until fragrant.

Add the rice and spices: Add the rice and stir briefly until it becomes glossy. Add the turmeric, paprika powder, and chopped tomatoes and stir well.

Cook the rice: Pour in the warm vegetable stock, stir once, and bring to a boil. Reduce the heat and cook, stirring occasionally, for 20 minutes, until the water is completely absorbed and the rice is cooked through.

Add the vegetables: add the peas on the surface, cover and let stand for 5 minutes with the heat off to cook evenly.

Serve: Garnish with lemon slices, and enjoy while warm!
