🛒 Ingredients
- One large onion, halved
- One large piece of ginger, bruised and grilled briefly
- Two cinnamon sticks
- Three grains of star anise
- 3 cloves garlic, bruised
- One tablespoon of roasted coriander seeds
- 1.2 liters of water or vegetable stock1.2 liters of water or vegetable stock
- 2 tablespoons of vegetable soy sauce, 1 tablespoon of sweet soy sauce, and salt to taste
- 200 grams of rice noodles (wide vermicelli), soaked until soft
- 150 grams of oyster mushrooms or button mushrooms, you can also use diced tofu
- 100 grams of bean sprouts, steep in hot water for a while
- Lime, sliced chilies, and hot soy sauce as a complement

Toast the spices: lightly toast the onion and ginger until softened and fragrant. Lightly toast the cinnamon, star anise, and coriander seeds.

Cook the broth: Bring water/stock to a boil, add all the spices and seasonings. Cook over low heat for 45 to 60 minutes, until the aroma of the spices is fully released. Stir the broth frequently to ensure it's clear and adjust the seasoning.

Prepare the filling: Boil the rice noodles briefly until soft, drain. Cook the mushrooms/tofu in the broth briefly until cooked through.

Serving: Arrange the noodles in a bowl, add the filling, then pour over the boiling hot sauce.
