Yum Woon Sen It is a very popular fresh salad dish from Thailand, now served completely animal-free or 100% plant-based! This dish combines transparent, chewy glass vermicelli with fresh vegetables, mushrooms, and a seasoning of lime juice, coconut sugar, chilies, and onions that balances the sour, spicy, sweet, and savory flavors. Without meat or animal products, it still tastes refreshing, appetizing, light yet filling, and looks beautiful and is perfect as an appetizer or a healthy snack!

🛒 Ingredients

  • 50 grams of glass vermicelli, soak in warm water until soft then drain
  • 100 grams of oyster mushrooms, boil briefly then drain
  • 1/2 carrot, cut into matchsticks
  • 1/2 red/yellow bell pepper, thinly sliced
  • One cherry tomato, halved
  • Coriander leaves, spring onions and lettuce to taste
  • 3 tablespoons fresh lime juice
  • 2 tablespoons vegetable soy sauce
  • One tablespoon of grated coconut sugar/brown sugar
  • 1 clove garlic, finely chopped
  • 2 to 3 bird's eye chilies, finely sliced (adjust to your preference for spiciness)
  • One tablespoon of coarsely ground roasted peanuts

    Make the sauce: mix all the seasoning ingredients in a large bowl and stir until the sugar dissolves and the flavors are balanced.

    Prepare the ingredients: put the glass vermicelli, mushrooms, and all the vegetables into a bowl containing the seasoning.

    Mix well: Stir gently until all ingredients are evenly coated with the seasoning, let stand for a while to allow the flavors to soak in.

    Serve: Arrange on a pretty plate, sprinkle with the remaining peanuts and coriander leaves, and enjoy immediately while it's fresh!
