🛒 Ingredients
- 200 grams of macaroni or similar pasta (make sure it is vegan)
- 100 grams of soft boiled red beans and black beans
- One onion, finely chopped
- 2 cloves garlic, chopped
- One carrot and 1 bell pepper, cut into small cubes
- Two fresh tomatoes or 3 tablespoons of tomato sauce
- 300 ml vegetable stock
- For the spices: one tablespoon of chili powder, 1/2 teaspoon of cumin powder, 1/2 teaspoon of paprika powder, salt and pepper to taste.
- A little coconut sugar to balance the taste
- Olive oil to taste
- Chopped coriander/parsley leaves, as a complement
- Grated vegetable cheese (optional)

Boil the pasta: cook the macaroni until al dente, drain and set aside.

Saute the spices: heat the oil, saute the onions until they are soft, add the garlic, carrots, paprika, and all the spices until fragrant.

Cook the filling: Add the tomatoes/tomato sauce, beans, and vegetable stock. Cook over low heat for 10 to 15 minutes, until the sauce thickens slightly and the flavors are absorbed.

Mix: Add the boiled pasta and stir gently until everything is well combined and warmed through. Then, adjust the seasoning.
