Caldo Verde It is an iconic and much-loved soup from Portugal, served entirely with 100% plant-based ingredients! 🛒 Ingredients
- 500 grams of potatoes, peeled and cut into large cubes
- One bunch of kale/green mustard greens/curly cabbage, remove the hard core, slice very thinly
- One onion, finely chopped
- 2 cloves garlic, finely chopped
- 1 liter of savory vegetable stock
- 2 tablespoons olive oil
- Salt and black pepper to taste
- Dried chili flakes or smoked paprika (optional, for a distinctive aroma)
- A little extra olive oil when serving

Saute the spices: heat the olive oil in a large pan, saute the onions until soft, add the garlic and saute briefly until fragrant.

Cook the potatoes: Add the diced potatoes, pour in the vegetable stock, bring to a boil, then reduce the heat. Cover and cook for 20 to 25 minutes, until the potatoes are completely tender.

Puree some: take half the potatoes, mash them and then return them to the pan to make the sauce naturally thick and creamy.

Add green vegetables: add sliced green vegetables, cook briefly for 2 to 3 minutes so that they remain bright green and slightly crunchy. Adjust the taste with salt and pepper.
